Is dried ginger interchangeable with fresh in a recipe?
Not one-to-one. Drying deepens the profile — warmer, more persistent, less bright — and concentrates it, so typical replacement runs far below fresh weight. For chai, bakery and masala work the dried profile is usually what the recipe actually wants.
Which cut should I specify?
Powder for blends, bakery and beverages; granules and minced for chutneys, pickles and wet systems; flakes and chopped where visible pieces or brewing matter. Describe the application and we will recommend and sample a cut.
How hot is your ginger?
