Almost all of the world's dried chilli is red, which is precisely what makes green chilli powder interesting. Chillies dried at the green stage keep a profile the ripe red fruit has already lost — sharper, brighter, more vegetal, the flavour of a fresh green chilli bitten rather than a ripened one ground. For cuisines built on green heat, from Gujarati and South Indian cooking to Thai and Mexican applications, red chilli powder is simply the wrong ingredient.

Storage

How it is made

How hot is your green chilli?

Will the powder stay green in my product?
